Here’s a recipe for an old classic with a few twists and turns to make it healthier!
1/2 stick organic butter or 1/4 cup coconut oil
1 cup crushed whole grain crackers or graham crackers
1 bag organic chocolate chips
1 cup flaked coconut
1 cup chopped dried apricots or cranberries (or other dried fruit of choice)
1 cup organic milk
1 cup chopped walnuts
In a square or small oblong glass pan, melt the butter in the oven while it preheats
at 350. Or, if you are using coconut oil, pour the oil evenly into the pan.
Each of the other ingredients creates a layer for the finished cookie.
Spinkile a lyaer of cracker crumbs to make the crust as it soaks up the oil.
Then sprinkle on the chocolate chips followed by a layer of coconut, and a layer of dried dried fruit.
Pour the milk evenly over the other five layers.
Then sprinkle with nuts for the seventh layer.
Bake for 20- 25 minutes at 350 degrees.
